Competitive Pricing: Buying beef in larger quantities, such as a quarter, half, or whole, involves pricing factors like "live weight," "hanging weight," and "boxed weight." 

The hanging weight typically amounts to around 60% of the live weight, and the boxed weight is approximately 60% of the hanging weight. While most butchers hang the beef for 7 to 14 days, Pindhurst Farms takes it a step further, aging the beef for 15 days. This extended aging process enhances the flavor and tenderness, making it well worth the effort and cost. 


As an example, if a cattle farmer offers a price of $3.50 per pound of hanging weight, you can expect to pay around $5.83 per pound once the meat is packaged, in addition to the processing fees paid directly to the butcher.

Convenient Ordering Timeline: Our cattle farmers open "chapters" for beef before their animals reach the ideal weight for processing. Each chapter in our shop comes with a projected timeline. While you purchase Utah beef labeled as "grass-fed," we allow for some finishing with alfalfa and grain, which contributes to beautiful marbling. This period is when quarters, halves, or whole sides of beef become available for pre-order. After the finishing stage, we handle all processing details, including hanging, aging, and customization to your preferences. It's essential to plan ahead so that you have a well-stocked freezer when you need it.

Customized Processing: When you buy Utah sourced beef from Pindhurst Farms , individual preferences, family size, and cooking habits come into play. You have choices regarding packaging, cuts, and sizes. You can opt for traditional paper wrapping or modern vacuum packaging to reduce liquid seepage and freezer burn. Customize your order by specifying the types of cuts you prefer, whether it's more steaks than roasts, a preference for ground beef over stew meat, desired steak thickness, and the weight of roasts.

For instance, if you're purchasing a whole beef weighing 490 pounds (boneless and trimmed), it could break down like this:

185 lbs. of lean trim or ground beef 85 lbs. of round roasts and steaks 90 lbs. of chuck roasts and steaks 80 lbs. of rib and loin steaks 50 lbs. of other cuts (brisket, flank, short ribs, skirt steak) Be mindful of freezer space when planning your purchase. A quarter of beef fits easily in a 5-7 cubic foot chest freezer, a half beef requires about 8 cubic feet, and a whole beef needs at least 16-17 cubic feet of freezer space.
